white chocolate teacakes with milk chocolate icicng....

as requested by val, i`m going to start posting my recipes, so here`s my first one. this recipes is inspired by fergal connolly`s devil`s food cupcakes.
for the teacakes:
225g self-raising flour.
1 tsp baking powder.
225g caster sugar.
225g butter, softened.
2 seperated eggs.
100g white cooking chocolate, melted.
1 tsp vannila essence.
4 fl oz milk.
for the icing:
200g milk chocolate, melted.
200g white chocolate, melted.
step1: preheat the oven to 175 c ( 350 f/gas mark 4 )
place 18 to 24 paper cases into muffin tins.
step2: sieve the flour and baking powder and ste aside.
in another bowl, cream the sugar and butter together, then add the egg yolks and beat well.
step3: place the white chocolate in a bowl and slowly melt over a saucepan of simmering water. ( make sure the bowl is not touching the water in the saucepan as it might burn the chocolate.)
step4: add the melted chocolate and vanilla essence to the cake mixture, and mix well. then add the flour and milk alternately, beating well with each addition.
step5: in a clean bowl beat the egg whites until they form soft peaks, and then gently fold them into the cake mixture.
step6: spoon the mixture into the cases, and bake for 20 minutes. remove tins from the oven and after 5 mins remove the cakes and let them cool on a wire rack.
For the icing:
over a saucepan of simmering water, melt the milk and white chocolates together, when they are melted, leave to cool for about half and hour and then place the bowl in the fridge for about 15 mins.
after this time the chocolate should have become a bit thicker,and the cakes should have cooled down.
spoon the chocolate on to the cakes , then put them on a baking tray and place them in the fridge for about 5 mins so that the chocolate hardens.
store in an airtight container with greeseproof paper between the layers to stop the cakes from sticking to eachother.

i made this cake for my sister-in-law sally, the brown cubes are pieces of fudge.
